Fillet knifes are great for fish and other things you'd need a thin flexible blade for. This knife is available in 5/32" 80crv2 carbon steel and 1/8" AEB-L stainless steel. This is a knife blank, meaning that it's a piece of metal cut in the shape of a knife; it isn't sharp and there is no handle. Your job is to turn it into a beautiful knife.
We highly recommend using our AEB-L stainless option for our kitchen knives. The stainless will offer better corrosion resistance and last longer in the kitchen. Otherwise we still offer our 80crv2 which is still a good all around steel option.
It comes annealed to make shaping your knife easier. Steel will need to be heat treated(hardened) in order to keep an edge.
